Cognac

Cognac takes it name from the town of Cognac in France. Under French law the spirit must be ditilled from wine containing at least 90% of the following three grape varieties Ugni Blanc, Folle Blanche or Colombard the grapes having been grown in the the French Departements of Charente and Charente-Maritime. Other grape varieties permitted in the remaining 10 % are Folignan, Salect, Montils, and Samillon Juranson blanc, Meslier St-Fransois (also called Blanc Ramc). For the spirit to be also called Cognac it must be distilled twice in copper pot stills and aged at least two years in French oak barrels.
