Sylvie Esmonin is an energetic and passionate winemaker, and an avid traditionalist. The domaine is fully organic but not certified, since she started following this route long before it became fashionable and sees no reason why she should now have to submit to inspections when she was doing it long before they were. The grapes are crushed and fermented in open wood vats before being fed into barrels for the malo-lactic fermentation and ageing, mostly in old oak. Only her top cuvÃ©e Clos St Jacques uses a high proportion of new oak. Very little sulphur is added during the winemaking process. The wines are rich, elegant and complex, and always sell out shortly after release.
