The Chardonnay grapes used to make this wine come from 15-20 year old vines planted at Antinori`s Castello della Sala, vineyard. The grapes were harvested and immediately placed under refrigerated conditions to maximise the wine`s aromas. The musts remained in contact with the skins for about 8 hours at 10C. and are then transferred to new French oak 225 liter barrels where alcoholic fermentation took place over a period of 15 days. The wine remained on its lees in the barrels for about 5 months, during which time it completed its malolactic fermentation. It was then racked, blended, bottled, and cellared for a further 10 months the historic cellars of Castello della Sala before being released. A complex bouquet with fruity aromas of citrus, pineapple and pears blending with vanilla from the oak used for ageing. Excellent and unspoilt varietal character. Well-structured palate with lingering flavours.
