Sake is one of Japan’s traditional drinks, and is produced from rice, a grain, so in one sense it is closer to a beer than a wine. Yet it isn’t sparkling like a beer, or distilled like a spirit, and its flavour is closer to wine than beer. Like wine, there is myriad of flavours in good sake, and a wide varieties of grains – 65 – used to produce it in the 1800 or so sake breweries in Japan.
