Given it’s popularity, it may be a surprise to know that lager was first brewed in the UK in only 1864, and only really dominated the market after 1950, once the continuous fermentation process allowed supply to keep up with demand. Lager is distinguished from ale by its yeast. Lager yeast ferments at lower temperatures and flocculates on the bottom of the fermenting vessel, while ale yeast ferments at higher temperatures and settles on the tops of fermentation tanks.
