Viticulture
There are four varieties used in this blend: Cabernet Franc 43%, Merlot 28%, Cabernet Sauvignon 23% and Petit Verdot 6%.
Winemaking
All the component cultivars were de-stemmed without excessive crushing and all unwanted stalks removed on the sorting table. The whole berry component in the open stainless-steel fermenters was at 30%. After 12 hours of cold soaking, each of the musts were inoculated with a commercial yeast strain best suited to the specific variety. Pump overs were given three-to- four times daily to extract colour, tannin and flavour. Fermentation for each of the cultivars ran at 24-28 degrees Celsius and lasted for 5- 7 days, after which the wine was gently pressed and the free-run juice was consolidated with sufficient press fraction to enhance the structure of the wine. The wine was gravity fed to second and third fill French oak barrels for secondary malolactic fermentation. Maturation in 225 litre French oak barrels lasted for 13 months. The specially-selected barrels for all four varieties were then blended and lightly filtered, prior to bottling.

Subject to stock availability and successful payment authorisation, we aim to despatch your order the next working day after you place your order. Our Standard Delivery is a next day service for most of the mainland UK from date of despatch, and The Highlands and Islands areas are on a 2-3 day service normally. As most orders are delivered via our chosen courier company, we cannot offer guaranteed delivery times, however the vast majority of orders placed arrive on the next working day. During busy periods these delivery times may extend. IF YOUR ORDER IS TIME CRITICAL PLEASE RING THE OFFICE TO GET MORE UP TO DATE INFORMATION ON CURRENT DELIVERY TIME SCALES, AND WE WILL DO OUR BEST TO MEET YOUR REQUIREMENTS, BUT PLEASE NOTE WE ARE COURIER DEPENDENT ONCE THE ORDER LEAVES US, SO WE CANNOT ABSOLUTELY GUARANTEE A DELIVERY DATE.
We are able to hold your order if you would like to organise a day when you are going to be in, to do this just indicate it in the notes box provided in the delivery area of the order process. Please add any other specific delivery requirements in the same box and we will do our best to ensure they are followed, or alternatively call us on 01472 852118 and we will do our best to help you. Our chosen Couriers deliver Monday to Friday between 8.00 am & 6.00 pm.

Please note that all our consignments normally REQUIRE A SIGNATURE on receipt. We will NOT be able to leave your order without someone taking the order in, we cannot leave your order unattended in a porch or garage etc., unless we get written confirmation from you that this is acceptable and that you will take full responsibilty if the parcel goes missing. However we are able to leave it with a neighbour or at an alternative address where they can take the goods in, please indicate this in the box for notes on the delivery page of the order process, if this is a requirement. If no-one answers the door, the address will be carded in the normal manner you should contact the courier or us to get the delivery rescheduled.
Orders under £30 in value will incur a small order £10 carriage charge to standard none surcharged UK delivery areas.
