VITICULTURE:
The precision-selected Shiraz vineyards for this ultra-premium wine are North-South facing, while the Mourvedre and Grenache vineyards face East-West, for less direct sun exposure, and are grown in deep Oakleaf soils. The vines are vertically shoot positioned on extended trellises for optimal vine ripening. Irrigation is scheduled according to soil moisture monitoring and leaf water potential profiles.
WINEMAKING:
The intensely flavoured, specially selected, handpicked Shiraz, Mourvedre and Grenache grapes were destemmed onto a sorting table, where any stalks were removed, retaining a 30% whole berry component into tank. Fermentation of the individual red wines occurred at 24-28°C and pumpovers were done three-to-four times daily to extract aromatics and flavour. During this time, the wine underwent a single rack and return for additional soft extraction. Ferment lasted six-to-eight days per cultivar. The red wines were pressed immediately after fermentation was completed and gravity fed to 50% new, 30% second fill and 20% third fill 225 litre French oak barrels for Malolactic fermentation. After 12 months of maturation, the component wines were blended together and racked back to barrel for a further four4 months of integration. The wine was then lightly filtered, prior to bottling.
TASTING NOTES:
A complex array of black pepper, liquorice and dark cherry with a hint of truffle runs seamlessly onto a rich midpalate, cradled in oak spice and a long, savoury finish. The elegant complexity of the His Master’s Choice lends itself well to complex dishes, such as oxtail and lamb shank.
Our delivery charges are based on the number of bottles in your order, and each case can hold 12 x 75cl bottles as shown in the table below smaller and larger bottles are pro rata. We do not have a minimum order requirement.
Subject to stock availability and successful payment authorisation, we aim to despatch your order the next working day after you place your order. Our Standard Delivery is a next day service for most of the mainland UK from date of despatch, and The Highlands and Islands areas are on a 2-3 day service normally. As most orders are delivered via our chosen courier company, we cannot offer guaranteed delivery times, however the vast majority of orders placed arrive on the next working day. During busy periods these delivery times may extend. IF YOUR ORDER IS TIME CRITICAL PLEASE RING THE OFFICE TO GET MORE UP TO DATE INFORMATION ON CURRENT DELIVERY TIME SCALES, AND WE WILL DO OUR BEST TO MEET YOUR REQUIREMENTS, BUT PLEASE NOTE WE ARE COURIER DEPENDENT ONCE THE ORDER LEAVES US, SO WE CANNOT ABSOLUTELY GUARANTEE A DELIVERY DATE.
We are able to hold your order if you would like to organise a day when you are going to be in, to do this just indicate it in the notes box provided in the delivery area of the order process. Please add any other specific delivery requirements in the same box and we will do our best to ensure they are followed, or alternatively call us on 01472 852118 and we will do our best to help you. Our chosen Couriers deliver Monday to Friday between 8.00 am & 6.00 pm.

Please note that all our consignments normally REQUIRE A SIGNATURE on receipt. We will NOT be able to leave your order without someone taking the order in, we cannot leave your order unattended in a porch or garage etc., unless we get written confirmation from you that this is acceptable and that you will take full responsibilty if the parcel goes missing. However we are able to leave it with a neighbour or at an alternative address where they can take the goods in, please indicate this in the box for notes on the delivery page of the order process, if this is a requirement. If no-one answers the door, the address will be carded in the normal manner you should contact the courier or us to get the delivery rescheduled.
Orders under £30 in value will incur a small order £10 carriage charge to standard none surcharged UK delivery areas.
